Ingredients:
- 2 Catfish fillets (3/4 lbs.)
- 1/8 cup buttermilk
- 1 tsp. Dijon mustard
- 1/4 c. cornmeal
- 1/2 tsp. each: salt, onion powder, paprika
- 1/4 tsp each: garlic powder, dried thyme, cayenne, pepper
- suggested garnish: lemon wedges, baked beans, rice pilaf, collard greens, sauteed kale
Directions:
- Preheat the boiler of your oven; oil a wire rack and place on a baking sheet
- Whisk buttermilk + mustard in a bowl until smooth
- Mix cornmeal + spiced in a shallow bowl or plate
- Dip each fillet in buttermilk mixture, then cover with cornmeal mixture; place on rack
- Broil until fish is opaque in the center, about 3-5 minutes per side
