Dinner For 2: Cajun Catfish

  • 2 Catfish fillets (3/4 lbs.)
  • 1/8 cup buttermilk
  • 1 tsp. Dijon mustard
  • 1/4 c. cornmeal
  • 1/2 tsp. each: salt, onion powder, paprika
  • 1/4 tsp each: garlic powder, dried thyme, cayenne, pepper
  • suggested garnish: lemon wedges, baked beans, rice pilaf, collard greens, sauteed kale

  1. Preheat the boiler of your oven; oil a wire rack and place on a baking sheet
  2. Whisk buttermilk + mustard in a bowl until smooth
  3. Mix cornmeal + spiced in a shallow bowl or plate
  4. Dip each fillet in buttermilk mixture, then cover with cornmeal mixture; place on rack
  5. Broil until fish is opaque in the center, about 3-5 minutes per side
