One of the easiest and tastiest ways to cook vegetables is, to me, baking. The other night I had to use up the sack of mixed potatoes I couldn't resist picking up for their cute factor. I set the oven to 400 degrees and chopped the taters into two to four pieces each so they'd cook quickly. I threw in a few skinny carrots for good measure, tossed the pieces with olive oil, salt, pepper, minced onion, garlic and a splash of balsamic vinegar and baked them on a cookie sheet for thirty minutes. Yumm!
